  1. Over-drying

    The air fryer cooks quickly. Check for doneness 2–3 minutes earlier than the recipe states, especially the first time.

    Air fryers run hotter at the food surface than most people expect, so the last minutes matter most.

  2. Blocking airflow

    Don't line the bottom with a solid sheet of foil or parchment. Use perforated liners or poke holes!

  3. Wet batter

    A "wet" batter (like tempura) will drip off and won't set. Use a "dry" breading method: flour → egg → breadcrumbs.

    Frozen breaded food works well because the coating is already set — cook it straight from frozen.

  4. Skipping the marinade

    Even 30 minutes in a marinade dramatically improves flavour and tenderness. Dry spices can burn at high heat.

  5. Too much oil

    Excess oil will drip, smoke, and create unpleasant odours, and won't make the food crispy.

  6. Light items

    Bread slices, tortillas, and leafy greens can blow around and hit the heating element. Weigh them down or use a rack.

  7. Aerosol sprays

    Avoid sprays containing propellants (like PAM) as they can damage the non-stick coating. Use a refillable oil mister instead.

Why is my air fryer food soggy instead of crispy?

Soggy results mean the surface is steaming instead of browning. Check these three things in order:

  • Crowding. Cook in a single layer, or no more than two-thirds full, and work in batches if needed.
  • Moisture. Pat meat, fish and vegetables dry with kitchen paper before oiling. Salt vegetables like zucchini and mushrooms after cooking, not before.
  • Not shaking. Shake or flip every 5–10 minutes so every side meets the hot air.

Why is my air fryer smoking?

White smoke usually comes from fat dripping onto the hot drawer, or from too much oil. For bacon, sausages and ribs, add 2–3 tablespoons of water or a slice of bread under the rack to catch the fat.

Is it safe to use foil or parchment in an air fryer?

Yes, with care. Use perforated parchment liners or poke holes so air can still flow, never cover the entire bottom, and make sure foil never touches the heating element. Light liners must be weighed down by food so the fan cannot lift them.
